Ingredients

For the sweet pastry

  • 175g plain flour
  • 100g cold unsalted butter, diced
  • 50g icing sugar
  • 1 large egg yolk
  • 1 to 2 tbsp cold water

  • 200g full-fat cream cheese
  • 100ml double cream
  • 80g caster sugar
  • Finely grated zest of 2 limes
  • 3 tbsp fresh lime juice

  • 1 large pink dragon fruit, peeled and cubed

How to Make Vivid Dragon Fruit and Lime Tarts

  • Prepare the oven: Preheat the oven to 200°C or 180°C fan. Place a shelf in the middle of the oven so the tarts bake evenly.
  • Make the pastry: Rub the butter into the flour until it resembles fine breadcrumbs. Stir in the icing sugar, then add the egg yolk and enough cold water to bring it together into a soft dough.
  • Chill and roll: Wrap the dough and chill for 20 minutes. Roll out on a lightly floured surface and line six loose-based tart tins. Prick the bases and chill again for 10 minutes.
